This graceful nymph of Greek legend may have
been transformed by the angry gods into a bear for daring to consort with
Zeus, but her beauty reigns immortal, illuminating the evening sky as the
Great Bear constellation. The sensory delight of one Callisto
chocolate is similarly destined to provide an infinite landscape of pleasure. At
its heart is a delectable gianduja of pistachio, almonds, and cocoa butter. A
layer of white ganache with a whisper of vanilla adds an aromatic kiss of
mystery to this confection, which is dipped in bittersweet chocolate and regally
crowned with a sliver of pistachio.
Daphne
This naiad of Greek legend fled across a craggy Grecian landscape,
redolent of sea-towering cliffs and ambrosial citrus, to escape the love
of Apollo, preferring to be transformed into the aromatic laurel tree
rather than succumbing to an unwanted love.
Daphnecaptures in one delectable bite the tastes and temptations
of that flight, combining the mysterious floral essence of a Grecian
countryside with the complex flavors of marzipan, ginger, and pistachio,
drenched in the romantic lure of deeply dark chocolate and capped with a
fragrant peel of citrus bathed in the bittersweet regret of Cointreau®.
Galatea
The sea nymph Galatea was coveted by the
infamous Cyclops of Odyssey fame. Enamored of a young man named Acis,
she defied the evil giant, who, in a fit of rage, slew her young lover. Grief
stricken, Galatea transformed her lover’s lifeblood into the beautiful River
Acis. A fitting tribute to the transformative nature of eternal love, our Galateachocolate layers a raspberry pâtés de fruit, delicately flavored
with raspberry Chambord®,
with a hazelnut ganache blended with praline. The fruit and nut layers are then
submerged in a sea of milk chocolate and crowned with a crunch of carmelized
hazelnuts.
Pallas
The young naiad Pallas, playmate of the
goddess Athena, was accidentally slain by her beloved friend in a game of war. In an expression of grief and loyalty, the goddess of wisdom joined the naiad’s
name to her own, calling herself, forever after, Pallas Athena. Our Pallaschocolate honors these warrior comrades with the commingling of two valiant
flavors. Its filbert base is blended on one side with
ouzo-flavored milky chocolate, on the other with a dense concentration of
dark espresso laced with chocolate as bittersweet as the legend itself.
Kastalia
Transformed by Apollo into the sacred fountain
that serves the Delphic Oracle at the foot of Mount Parnassus, the naiad
Kastalia continues to inspire the poetic muse of those fortunate to drink
from her sweetly murmuring waters. Our delectable Kastalia
chocolates were similarly inspired, and are undoubtedly the closest you
will ever come to edible poetry. Imagine a buttery smooth ganache of
milky chocolate, fragrantly infused with the essence of Earl Grey tea,
encased in a midnight lilt of our finest bittersweet chocolate, which has
been graced with a wisp of lemon for a subtle aftertaste that will make
you feel as immortal as a drink from Kastalia’s silvery waves.
Agamede
Legend has it that this
fair-haired nymph, consort of Poseidon, was well-versed in the healing
powers of medicinal herbs. Among them, no doubt, was that rarest of
spices, masticha. Grown almost exclusively on the Greek Isle of
Chios, this delicate member of the pistachio family exudes a pine-like
fragrance that lingers on the palette with the brisk freshness of a walk
in the woods. This mysterious herb lends its aura of magic to our Agamede chocolate where it is blended into a sensuous layer of
dark chocolate ganache. Below, lies a dense frappé cream,
embellished with the exotic tastes of wild cherries, crunchy almonds, and
the essence of roses. Coated in a decadence of dark and milk
chocolate.
